Pork Tenderloin

  • Yield: 12 servings (160 calories and 28% fat per serving)

Ingredients:

4 (3/4-pound) pork tenderloins

1/2 teaspoon salt

1/4 teaspoon pepper

Vegetable cooking spray

1 tablespoon olive oil

1/2 cup vinegar

1 tablespoon minced fresh rosemary

3 tablespoons honey

1 tablespoon mustard

Fresh rosemary sprigs (optional)

Procedure:

  1. Trim fat from tenderloins, sprinkle with salt and pepper.
  2. Coat a large nonstick skillet with cooking spray; add oil. Place over medium-high heat until hot.
  3. Add 2 tenderloins, cook for 10 minutes or until browned.
  4. Remove form skillet, and keep warm.
  5. Repeat procedure with remaining 2 tenderloins.
  6. Place tenderloins on a rack in a roasting pan coated with cooking spray.
  7. Combine vinegar, rosemary, honey, and mustard in a small bowl, stirring well then brush over tenderloins.
  8. Insert a meat thermometer into thickest part of tenderloin, if desired.
  9. Bake at 400 degrees for 25 to 30 minutes or until meat thermometer registers 160 degrees, basting frequently with vinegar mixture.
  10. Let stand for 10 minutes then cut into thin slices.
  11. Transfer to a serving platter, garnish with fresh rosemary sprigs, if desired.
