Minestrone

Ingredients:

4 tablespoons olive oil

1/2 cup chopped onions

1/2 cup sliced carrots

1/2 cup diced celery

1 to 2 cloves garlic, minced

6 cups low-sodium chicken broth

1 cup canned no-salt-added tomatoes

1 cup cooked macaroni (no salt added)

1 cup cooked white beans (no salt added)

2 tablespoons chopped fresh parsley

1/2 teaspoon fresh ground black pepper

1/4 cup grated Parmesan Cheese

Procedure:

  1. Heat olive oil in a large pot over low heat.
  2. Add onions, carrots, celery, and garlic.
  3. Cook 5 to 7 minutes, or until soft.
  4. Add the chicken broth, tomatoes, pasta, white beans, parsley, and black pepper.
  5. Cook for 5 minutes, or until thoroughly heated.
  6. Pour into individual bowls and garnish with Parmesan cheese.
